Rosemary Roasted Potatoes (and omelet...)

dinner last night-

normally i realllllly don't like gluten free bread. sick. but if you DROWN it in olive oil, and put enough freshly-grated parmesan and garlic, bake for 10 minutes, it's pretty awesome. i used the Ener-G tapioca loaf 'cause i didn't want to defrost anything.


9 or 10 small red potatoes (clean, leave the skin on)
2/3 cup olive oil
2 Tbs rosemary
Salt & Pepper to taste

quarter the potatoes and toss with the rest of the ingredients. lay out (single layer) on a baking sheet. cover with aluminum foil and bake at 350 for about 30 minutes or until tender. set the oven to broil for about 10 minutes so they crisp a little bit. add more salt and pepper to taste.

chop a handful of the leftover potatoes very small and throw in a skillet with a handful of cheese (havarti and cheddar!) and a three eggs. it's a very big omelet. which i ate by myself.
