1 block of tofu
1/2 can of coconut milk
1 cup of mango juice (i use Ceres)
piece of ginger about the size of your thumb
between 1/2 and 1 Tbsp. red curry paste
1/4 cup fresh basil
salt to taste

mince the ginger, chop the basil, and dice the tofu into small pieces
mix everything in a large saucepan. throw in your favorite vegetables, too.

cook on medium for about 30 minutes with the lid on (let a little

serve with white rice!

(i doubled the recipe. i'm gonna eat this for a week, all by myself ...IT'S THAT GOOD.)

I was wondering how to go about making a good coconut manog curry recently, thanks!
how spicy was that one? warm, spicy, or painful?
